Ingredients For the Noodles
- 1 cup black rice noodles
- 1 tbsp cold-pressed oil

- 2 garlic cloves, crushed
- 1 small onion, sliced
- 1 cup mixed vegetables (carrot, capsicum, beans)
- 1 tbsp soy sauce (or clean-label alternative)
- ½ tsp black pepper
- Salt to taste

Instructions
- Boil water in a pot and cook the black rice noodles for 3–4 minutes until soft but firm. Drain and rinse with cold water.
